Tasty Thai Prawns
Ingredients
1 tbsp oil 500 g prawns, cleaned
2 garlic cloves, crushed 1 lemon, juice of
1 tsp lemongrass, finely sliced 415 g tomato puree
2 tbsps coriander, sliced 1/2 cup sliced spring onions
2 tsps honey 1 cup coconut milk
1 tsp ginger, finely sliced
Method
Heat oil in saucepan. Add garlic, lemon grass, ginger & spring onions & cook this until soft. Add prawns & cook 2 minutes. Add honey, lemon juice & tomato puree. Simmer 5 minutes. Add coconut milk & coriander. Serve over prepared
